Will it physically fit and does your car use the sensor in the current radiator (Some cars had blanks fitted with the sensors were - or even sensors with no wires attached!). You need the high temperature stuff (otherwise it'll droop in hot weather). Otherwise yes it is contact adhesive.

I'd HIGHLY recommend doing it outside of the car as any glue overspray or drips will ruin the car interior.

That is under 30mpg so on the low side. I've had much better from my 2.0 turbo.

The coolant temperature sensor is a common fault so worth checking.

Matt is helpful and I've used stuff from him before including some stuff on my last K series rebuild. But beware the new SAIC gasket is still a MLS one and if liners are low or uneven then it'll leak. If liners are even and proud by 4 thou then MLS is the one to use (either a branded one or the one ...
